Meet your host

Chef Mo’s culinary journey began at an early age in the heart of his family kitchen, where he learned from his grandmother and mother that food prepared with love is the most flavorful. He still vividly remembers the taste of his grandmother’s shakshuka with merguez, a dish that embodies the power of simplicity and careful attention.
As his passion for cooking grew, Chef Mo ventured into Michelin-starred kitchens, where he honed his skills in refinement and creativity.

12:45 AM – Departure from Brussels
14:20 AM – Arrival at Tunis-Carthage Airport, where you will be transferred to your boutique hotel. Settle into your elegant surroundings and enjoy a welcome aperitif, followed by a delightful group diner prepared by Chef Mo.


07 April 2025

Start your day with a delightful breakfast before heading to the Medina of Tunis with Chef Mo, a UNESCO World Heritage site. Our first stop is Foundouk El Ghalla, also known as the Central Market, an architectural gem blending Art Deco and Moorish styles, dating back to 1891. This vibrant space, one of the Mediterranean’s largest fish markets, offers a sensory experience with tastings and historical insights.

After the market, we’ll wander through the narrow alleys of the medina, especially the area famed for its aromatic herb shops, soaking in the sights and scents.

Our tour continues with lunch at Dar El Jeld, Tunisia’s oldest and most iconic fine-dining restaurant.

In the evening, enjoy a cooking masterclass led by Chef Mo, followed by a dinner prepared by the chef himself.

Discovering Carthage & Sidi Bou Saïd and Domaine Neferis
On the third day, embark on a journey through Carthage, visiting key historical sites like the Antonine Baths and the Byrsa Hill.

Visit the charming village of Sidi Bou Said, renowned for its white and blue architecture and rich cultural heritage. Take in panoramic views of the turquoise sea, and explore the Baron d’Erlanger’s Palace, an eccentric Orientalist mansion. Savor traditional mint tea paired with Bambalouni, a local pastry inspired by Italian doughnuts.

The tour then leads to Domaine Neferis for a wine tasting and lunch experience.

The day concludes with a cooking masterclass led by Chef Mo, followed by a dinner prepared by the chef himself.

Visit to Domaine Ben Ismaïl
09:00 AM – Depart from your boutique hotel and head to Thuccabor to visit Domaine Ben Ismaïl, where you will discover Tunisia’s olive oil heritage through guided tastings and educational tours. The 50-hectare rolling landscape, home to 5,000 olive trees, showcases ancient Roman trees, reflecting a deep-rooted connection to the land dating back to Phoenician and Roman times.

The tour begins with an olive oil tasting session led by two certified tasters from the International Olive Council. You will also visit the olive press, goat farm, and enjoy a traditional lunch on the estate.

After the tour, depart for your next guesthouse, where Chef Mo will prepare a private dinner.


10 April 2025

Exploring Nabeul & Berber Traditions
Today, we journey to Nabeul to delve into the region’s culinary heritage, beginning with a hands-on workshop on preparing Harissa, the spicy condiment made from crushed red peppers, recognized by UNESCO as part of the Intangible Cultural Heritage of Humanity in 2022.

Afterward, we’ll visit Poterie Slama, a pottery workshop showcasing traditional Berber craftsmanship.

The day concludes with a cooking masterclass led by Chef Mo.


11 April 2025

As our journey comes to an end, we will transfer back to the airport for your return flight
