Meet your host

Chef Mo’s culinary journey began at an early age in the heart of his family kitchen, where he learned from his grandmother and mother that food prepared with love is the most flavorful. He still vividly remembers the taste of his grandmother’s shakshuka with merguez, a dish that embodies the power of simplicity and careful attention.
As his passion for cooking grew, Chef Mo ventured into Michelin-starred kitchens, where he honed his skills in refinement and creativity.

Day 1: Arrival & Welcome in Tunis.

Welcome to Tunis.

Upon your arrival at Tunis Carthage Airport, you will be transferred to the charming boutique hotel ‘Maison Dedine’. Settle into your elegant surroundings; enjoy a welcome aperitif, followed by a group dinner, and rest in preparation for the journey ahead.

Day 2: Discover the Medina of Tunis and Cooking Class

Start your day with a delightful breakfast before joining Chef Mo and a local Tunisian chef for an immersive exploration of the Medina of Tunis, a UNESCO World Heritage site.

The day begins with a visit to the Foundouk El Ghala, also known as the Central Market. This historic building, dating back to 1891, is an impressive example of Art Deco and Moorish architecture. As one of the largest and most vibrant fish markets in the Mediterranean, it offers a fascinating glimpse into Tunisian culinary traditions. Stroll through the bustling stalls, savor tastings, and listen to captivating historical anecdotes that bring the market’s rich history to life.

After exploring the market, we will meander through the narrow, winding streets of the Medina, particularly focusing on the area renowned for its aromatic herb shops. Immerse yourself in the sights, scents, and sounds of this enchanting historic quarter.

Following a well-deserved break with a refreshing glass of traditional tea at a charming café adorned in a thousand and one nights’ decor, we will continue our exploration with a leisurely wander through the Medina’s alleys, including a treasure hunt among the herb stalls.

Finally, we will reconvene with the chef for a personalized cooking class featuring the fresh produce purchased earlier at the market. You’ll have the opportunity to prepare and enjoy a delicious dinner crafted from your own culinary creations.

Day 3: Discovering Carthage,  Sidi Bou Saïd & Masterclass BY Chef Mo :

On the third day, embark on a captivating tour of Carthage. Explore historic sites such as the Antonine Baths, the Carthage Museum, and the Malaga Cisterns, which were essential for supplying water to Roman Carthage. Next, we will visit La Marsa, where Chef Mo will select fresh ingredients for a personalized cooking class. You’ll then have the opportunity to prepare and enjoy a dinner featuring your culinary creations.

Day 4: Olive Garden Delights & Berber Night Experience

On the fourth day, begin with a visit to a charming Olive Garden, where you’ll partake in an exquisite olive oil tasting and enjoy a lunch prepared by Chef Mo using fresh, garden-sourced ingredients. Then, proceed to an exceptional villa nestled within a private 7-hectare estate for an immersive Berber Night experience, complete with traditional music, dance, and a delectable Berber feast. End the day with an overnight stay at Apolonya, where you’ll enjoy comfort and style in a unique setting.

Day 5: Exploring Nabeul & Master Class

Today, we’ll journey to Nabeul to delve into the region’s rich culinary heritage. Start with a hands-on session where you’ll learn to prepare Harissa, a spicy condiment made from crushed red peppers that was recognized by UNESCO in 2022 as part of the Intangible Cultural Heritage of Humanity. Next, we’ll visit the Poterie Slama factory to discover traditional pottery techniques and shop for distinctive pieces. Following that, we’ll head to the vibrant Nabeul Market to gather ingredients for a cooking class, which will be held later at Apolonya.

Day 6: Farewell to Your Culinary Journey

As your culinary adventure ends, enjoy a final breakfast. Afterward, you will be escorted to Tunis Carthage Airport for your departure, taking with you the flavors and memories of an unforgettable experience.
